- 2 cups all-purpose flour
- 2 cups firmly packed brown sugar, preferably dark brown
- ½ cup butter, softened
- 1 cup chopped toasted almonds
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup sour cream
- 1 teaspoon vanilla
- 1 egg
- 2 cups grated or finely chopped, peeled apples
- 1 cup toasted, sliced almonds, optional (adding these makes a delicious treat an even prettier one!)
Heat oven to 350 degrees. Lightly spoon flour into measuring cup and level off. In large bowl, combine flour, brown sugar, and butter; beat at low speed until crumbly. Stir in chopped almonds (reserving the sliced almonds for the top). Press 2¾ cups of crumb mixture in the bottom of an ungreased 13×9 inch pan. To the remaining mixture, add the cinnamon, baking soda, salt, sour cream, vanilla, and egg and mix well. Stir in grated apples. Spoon evenly over base. Sprinkle sliced almonds over the top and bake for 30-40 minutes or until a toothpick inserted in the center comes out clean. These have the best texture the day they are made so don’t plan ahead too much!
