Don Radovich, a former cook at the inn, discovered a variation of a muffin recipe from the Borgman’s Bed and Breakfast in Arrow Rock, MO. These are sinfully delicious!
- 1/3 cup butter, melted
- 1 cup light or dark brown sugar
- 2 eggs
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup chopped pecans
- 1 teaspoon pure vanilla extract more butter for preparing pan
Preheat the oven to 350 degrees. In a large bowl combine all of the ingredients. Fill greased mini muffin tin 3/4 full and bake for 10-15 minutes. Makes about 30 mini muffins. If I’m worried they won’t happily pop out of the tins, I might grease a pie plate or two and create wedges instead.
