Pecan Mini Muffins
- 1/3 cup butter, melted
1 cup light or dark brown sugar
1 cup all purpose flour
1/2 teaspoon baking powder
1 cup chopped pecans
1 teaspoon pure vanilla extract
more butter for preparing pan
Preheat oven to 350 degrees. In a large bowl combine all of the ingredients. Fill greased mini muffin tin 3/4 full and bake for 10-15 minutes. Makes about 30 mini muffins.
If I’m worried they won’t happily pop out of the tins, I might grease a pie plate or two and create wedges instead.
